INGREDIENTS
-3 tablespoons extra light tasting olive oil
-3/4 cup red onion, diced
-1 link Field Roast brand vegan Italian sausage, finely chopped
-2 cups kale, finely chopped
-1 large clove garlic, crushed
-4 cups water
-2 tablespoons vegan Better Than Bouillon No Chicken Base
-1/2 cup vegan Better Than Milk Soy or Rice Milk Powder
-4 medium Yukon Gold potatoes, cubed
-2 tablespoons Bacos brand bacon bits
INSTRUCTIONS
-Heat olive oil in a large saucepan.
-Add onion and cook for 2-3 minutes over medium-high heat.
-Add sausage, kale, and garlic. Mix well and cook for 1-2 minutes.
-Add water, chicken base, milk powder, potatoes, and bacon bits. Increase heat to high and bring to a boil.
-Reduce heat to low and simmer, covered, for 20 minutes.
Makes four two-cup servings.
